White Chicken Chili…
Happy Monday everyone! Can you believe Christmas is just 10 days away?!?! I can’t! It seems like this year has really flown by. It’s crazy how fast time goes the older you get….Aye….Anyway, I hope you all are feeling stress free and are ready for the Holidays. Over the weekend I did lots of baking and cooking. Since we had a snowy weekend, I was really in the mood for some chili, so here is what I came up with:
White Bean Chicken Chili:
Ingredients:
1 lb. boneless, skinless chicken breast
6 Roma Tomatoes, dices
2 16 oz cans of white beans ( drained and rinsed)
4 cloves of garlic
1 jalepeno (seeded and diced)
1 Tablespoon EVOO
2 zuccinis (diced)
1 onion (diced)
1 Tablespoon chili powder
1 Tablespoon cumin
1/2 tsp cayenne pepper
Salt and Pepper
4 cups of chicken stock ( I use reduced sodium)
Reduced fat shredded cheese
Method:
Sautee the onion, zucchinis, and jalepeno in a large stock pot with the 1/2 of the EVOO until translucent and soft. Dice the raw chicken and add it to a separate pan with the the second 1/2 of the EVOO. Season with the chili powder, garlic, and cumin until fully cooked. Add the chicken to the vegetables. Then add the diced roma tomatoes, chicken stock, beans, cayenne pepper, and salt and pepper to taste. Bring to a boil, then simmer with lid covered for 30 minutes. Adjust seasoning to your liking. Top off soup with a little shredded cheese and enjoy!!
