I looove cooking, especially during the summer months because vegetables and fruits are always so fresh! I’m always trying new, healthy recipes. A lot of times I like to take inspiration from cooking shows or from something I’ve had at a restaurant. The first time I ever had aqua fresco was last summer when we were getting our scuba diving certification at a place called Smoke. It’s a little taco joint with all organic ingredients. UH-MAZING! Actually, I’m completely getting a craving for this right now… ok… Must.. Stop… Aside from the delicious tacos they have fresh agua fresca to drink. Here is my take on their drink!
Recipe:
2 cups sliced watermelon
2 limes, zested and juiced
3 tablespoons sugar
1 1/2 cups water
*Add all ingredients to a blender until combined. Pour over ice and enjoy!
For dinner, here is an easy, healthy dish!
Ingredients:
1 package of orzo, cooked
1 zucchini
1 squash
1/2 pound- peeled and deveined shrimp
Fresh Dill
1/4 cup red onion
1 garlic glove-minced
salt and pepper to taste
1 1/2 tablespoon olive oil
1 cup Feta cheese (optional)
1/2 medium yellow onion
1 lemon zested, and juiced
Method:
Slice zucchini, yellow onion, squash, and place on a baking sheet. Sprinkle with salt and pepper and coat with 1 tablespoon of the olive oil. Bake at 350 degrees for 10-15 mins.
In a small pan heat 1/2 tablespoon of the olive oil and garlic over medium heat. Add the shrimp and sauté until pink. This only takes a few minutes. In a bowl combine the orzo, cooked vegetables, shrimp, dill, and feta cheese. Add the diced red onion, zest from the lemon, and juice. Add salt and pepper if necessary, then enjoy!!
