Samoas Inspired Rice Cereal Treats
It’s that time of year where we are all waiting on our delicious Girl Scout cookie order to come in. Since I can’t stop thinking about my favorite cookie of all time, I decided to to take the delicious flavors of the Samoa cookie and turn it into a Somas inspired rice cereal treat. I know this might seem a little random to put on my blog right now, but if you follow me on instagram, I started making rice cereal treat reels and they’ve been a huge hit! I decided to document them here so the recipe is easy to find. I hope you enjoy them!
Samoas Inspired Rice Cereal Treats
•1 package Marshmallows
•6 cups Rice Cereal
•3 tablespoons butter
•2 tsp coconut extract
•1 bag unsweetened coconut shreds
•8 Oz homemade caramel (or jar caramel)
•semi sweet chocolate morsels
Heat your caramel over low heat until just melted. Set aside. In another pan let the butter melt over low heat. Add marshmallows and heat over low until mostly melted. Add coconut extract and coconut shreds. Mix until combined. Mix in your caramel.
Remove from heat. Add 6 cups of Rice Krispies.
Place in buttered or non stick sprayed baking sheet so the treats are thinner than normal.
Using a 3” biscuit cutter, cut into circles. Using an apple core tool, cut out the center so they look like cookies. Dip the treat in chocolate or spread with a spatula on the bottom. Using a piping bag, pipe chocolate over the top! Enjoy!
What do you think? I was so excited how these turned out! They are perfectly chewy and coconuty with just the right amount of chocolate. Since we are on the subject, my next favorite cookie is definitely the Thin Mints, but really is there even a Girl Scout cookie that is not super tasty?
