Happy Monday everyone! I hope your weekend was just lovely! We hit the slopes with some friends and, sadly, took down our Christmas decorations. Our house looks so plain now! There really is something so cozy about Christmas decorations and lighting. Anyway, as promised, there will be some changes taking place on the blog in 2014. One thing I will be starting up will be “Motivational Monday” sessions. Nobody likes Mondays… it’s the first day of the work week and Friday seems so far away (4 days exactly…). After a fun filled weekend, I find it difficult for me to get motivated and back into my routine of working out, eating healthy, or accomplishing my goals for the week. Hopefully these sessions will shed a little light on your (and my) Monday blues.
Here is an easy, healthier alternative to taco night to get your week started right!
Turkey Taco Salad
2 romaine lettuce heads, chopped
1 lb ground turkey meat ( I get the 99% fat free)
2 roma tomatoes, diced
1 cup greek yogurt (in place of sour cream)
1/4 cup chopped red onion
1/2 cup crushed whole grain tortilla chips
1/2 cup reduced fat shredded cheese
3 tablespoons of taco seasoning ( I usually make my own because you can control what’s in it- here is a great recipe) or you can use 1 packet of reduced sodium taco seasoning
Brown the ground turkey in a nonstick skillet over medium heat until cooked through or no longer pink while breaking the meat up into crumbles. While the turkey is cooking, assemble the salad on a plate- lettuce, tomatoes, crushed tortilla chips, cheese, onions, a dollop of greek yogurt, and salsa. Please feel free to add any of your favorite taco toppings here as well and set aside. Once the Turkey is no longer pink, drain and then add back to the skillet. Add your taco seasoning packet or about 3 tablespoons of home made seasoning and 1/4 cup of water. Stir together, bring to a boil, and then simmer until the sauce thickens. Spoon about 6 ounces of turkey over your salads and enjoy!
