Chocolate covered strawberry cupcakes….
How amazing does this cupcake of the month sound?? Right in time for Valentine’s day, also! {Completely how I got inspired by this.} I always send Joey Shari’s Berries to work for Valentine’s day because he loves anything strawberry and they are so delicious. I’m sure he’d much rather get chocolate covered strawberries than flowers, right?
Cupcakes:
1 box of extra moist fudge chocolate cake mix (bake as directed)
Strawberry Mousse Filling:
1 cup heavy whipping cream
1/4 cup of sugar
2 cups of strawberries
1 tablespoon lemon juice
Method:
Chop and hull strawberries and place in a food processor. Add sugar and lemon juice until pureed. In a mixing bowl whip the heavy cream with a whisk attachment until stiff peaks form. Gently fold the strawberry puree in the whipped cream until combined. Using an apple corer, place into the cooled cupcakes and pull the center out. Using a piping bag, fill the center with the strawberry mousse.
Strawberry Marscapone Frosting:
1 lb. Marscapone frosting
2 tablespoons sugar
1/4 cup of strawberry puree (recipe above)
1 cup heavy whipping cream
Method:
Whisk the whipping cream and sugar until it forms stiff peaks. In a separate bowl stir the puree and marscapone cheese together until blended. Fold that mixture in the whipped cream gently until combined. I use a piping bag with an open tip to frost the cupcakes
Chocolate Covered Strawberries:
1 bag of milk chocolate morsels
1 carton of strawberries
Method:
Using a double boiler ( or I just use one pot in another pot so that it’s not touching the boiling water) melt the chocolate morsels. Line a baking sheet with wax paper for the strawberries to lay on. Once they are melted, dip each strawberry one at a time and lay on the baking sheet. Cool in a refrigerator until the chocolate is hardened. Garnish each of your cupcakes and enjoy!
